- It's 1/2 cup of risotto rice.
- Prepare 2 cups of chicken stock.
- You need Half of large onion finely sliced.
- Prepare 1 of garlic clove.
- Prepare 1 table spoon of butter.
- Prepare 1 table spoon of oil.
- Prepare of Salt and pepper.
- Prepare 1/4 tsp of yellow food colouring.

- Put the oil in a pan and fry the onion until soft NOT brown. About 4 mins. Then add the minced garlic for 1 min.
- Add the butter and then the rice and lower the heat so that all the rice is coated in the oily onion mix.
- In a separate pan heat the chicken stock (you can use 2 cubes and water but buying bones and making your own is worth the effort).
- Turn up the heat in the rice and add a ladle full of chicken stock (about 20%) allow all the liquid to absorb.
- Repeat adding the stock 20% at a time (so 5 times) each time stir until all the liquid is absorbed.
- With the final chicken stock add the yellow food colouring, lots of black pepper, salt to taste and cheese if using - when all the liquid has nearly gone remove from heat and serve. Waiting 2-3 mins..
