  1. Put the oil in a pan and fry the onion until soft NOT brown. About 4 mins. Then add the minced garlic for 1 min.
  2. Add the butter and then the rice and lower the heat so that all the rice is coated in the oily onion mix.
  3. In a separate pan heat the chicken stock (you can use 2 cubes and water but buying bones and making your own is worth the effort).
