- Prepare 1 bag of shredded hashbrowns (I used Simply potatoes).
- Prepare 1 of yellow onion sliced.
- Prepare 1/2 of a green pepper, diced.
- It's 1 can of green chilies.
- Prepare 5 of frozen breakfast sausage links.
- It's of Olive oil.
- Prepare 1 tbs of minced garlic.
- You need of S&p to taste.
- Prepare 1/2 bag of if shredded cheddar cheese.
- It's 2 of eggs whisked.
- Prepare of Toppings.
- Prepare of Sourcream.
- You need of Shredded cheese.
- You need of Avocado.
Breakfast muffins instructions
- Preheat oven to 375. Pour olive oil in pan over medium heat. Add bag of shredded hashbrowns. Follow instructions on bag(cook 6-7 min, flip add more olive oil cook 6-7min). Once cooked add to mixing bowl. In same pan add a little more olive oil. Add green pepper, onion, garlic & sausage. Once onions & peppers are done add everything except sausage to bowl. (The sausage needs to be cooked a bit longer). Once sausage is cooked cut into bite size pieces using spatula. Add to bowl..
